Winemaking Process

The winemaking process begins with destemming the grapes, followed by a cold maceration period of 48 hours to enhance flavor extraction. Fermentation occurs in open-top stainless steel tanks, where regular pump-overs and manual punch-downs are employed to maximize flavor extraction. After fermentation, the wine remains on its skins for an additional 21 days to further soften and integrate the tannins. The wine is then aged in French oak barrels for 16 months, with a mix of new and previously used barrels to impart subtle oak complexity.
