VINEYARDS:

Selected vines from the greater Western Cape area. Grown mostly on rich alluvial soil types to express prominent fruit. 

GROWING SEASON AND HARVEST:

The weather conditions are somewhat Mediterranean like with cool evenings and hot days in between. Harvest typically happens in the cool of mornings to preserve the fruit and limit oxidation of flavors.   

 VINIFICATION:

These perfectly ripe grapes ripen early in the season to ensure the right style. Once in the cellar grapes get gently pressed to avoid any harsh phenols in the juice and cold fermented thereafter. 

TASTING NOTES:

Delicious sparkling wine with fruity aromas of pear, pineapple and citrus.  Fine bubbles with bright fruity flavours and zesty acidity. Enjoy this wine chilled as an aperitif or pair with seasonal fresh salads or seafood.  

SERVING:

Enjoy this wine chilled (5-8°C). Perfect aperitif and also pairs well with a variety of foods, including seafood dishes like chili, lime and coriander prawns, or smoked salmon & dill crème fraiche.
