Winemaking Process

The winemaking process begins with hand-harvested grapes, ensuring the selection of the finest fruit. Fermentation occurs in small open-top oak vats, with about 20% of the total crush fermenting naturally while the remainder uses a commercial yeast. Regular pump-overs and manual punch-downs are conducted during fermentation to maximize flavor extraction. After fermentation, the wine is aged in French oak barrels for 18 months, with 30% of the barrels being new and the rest in second, third, and fourth fill barrels. Each varietal is handled separately until the final blend is created.
