Winemaking Process
The grapes for this wine are meticulously harvested:
Shiraz and Mourvèdre: Picked fully ripe during the early morning to preserve freshness.
Viognier: Harvested once the skin shows a slight yellow hue before being whole-bunch pressed.
After crushing, the must undergoes a cold soak for a week prior to fermentation using selected Rhône yeast strains.
