What are Emulsions?

An emulsion is a mixture of two immiscible liquids, typically oil and water, where one liquid is dispersed in the other as tiny droplets. Without the aid of additives, emulsions tend to separate over time.   

Types of Emulsion Additives

Emulsifiers: These are surfactants that reduce the interfacial tension between the two liquids, allowing them to mix more readily. Examples include lecithin, sorbitan esters, and polysorbates.
