The end result is wine that is Infused by Earth.

The Infused by Earth is composed out of 2 bocks of bush vine vineyards. Both blocks are planted right at the top of the Eikendal farm into decomposed granite. Clones CY548 and CY95. The soil is 60-80cm deep with gravel mixed into the granite. White clay which is very significant in that all organic matter has been washed out. The vines are planted facing the south-easter wine head on all the time, receives cool air at night from false bay and because of the granite and clay, the vines stay in survival mode which carries the message of the terroir well. Yields are extremely low, but of excellent quality and produces 0.8-1kg grapes per vine.

VINIFICATION:

The grapes were hand-picked into 18kg lug boxes and were whole bunch pressed. No settling of the juice and went straight into stainless steel tanks. 50% of spontaneous fermentation in the tanks. The last 50% of fermentation was done 60% in 500l new barrel and 40% in granite amphora. This means fermenting and ageing granite in granite. 18 months of aging. No fining or filtration, natural settling of the wine.

The Cabernet Sauvignon is, true to Eikendal's signature style, sophisticated and full-bodied. Whiffs of ripe berries, dark chocolate, spices and pencil shavings greet you on the nose. On the palate, silky tannins await, complemented by a fruitiness and delicate oak flavors with a lingering aftertaste.

The Stellenbosch vineyards were planted in 2004 in "Koffieklip" ("Coffee Stone") soil with a clay layer 1m deep on the lower, western slopes of the Helderberg. With a maritime microclimate, the winters are wet and cold, and in summer the heat is tempered by a cool and fresh breeze from the Atlantic Ocean in False Bay.

VITIFICATION:

The vineyards (Cabernet Sauvignon Clones 163 and 46) were planted in an east-west row direction. The planting is 1.2m x 2.4m in vertical shoot positioning with spur pruning. The canopy height is approximately 1.4m with vines approximately 40cm off the ground.

Irrigation is restricted in order to produce grapes with concentrated characteristics of this special variety. Sugar loading, berry aromatic sequence, PH and TA are used to determine phenolic ripeness and picking dates.

VINIFICATION:

The grapes were hand-picked into 18kg lug boxes to prevent crushing and to lower risk of contamination. The grapes was destemmed, hand-sorted and gently transferred to tank by conveyer not to extract harsh tannins. Cold soaking started, followed by spontaneous fermentation, after which it is inoculated with pure yeast to assure clean fermentation and create pure aromas and taste. 3 - 4 pumpovers per day combined with punch downs and oxygen sparge. After fermentation we add some structure to the wine with 2 weeks of extended maceration, followed with a gentle press to recover 650L per ton. The wine underwent malolactic fermentation in a tank and then racked to barrels for aging. The wine was then aged for 18 months in 300l oak barrels, 15% new oak used.

Eikendal Charisma is an ingenious creation and a red blend living up to its name. The Shiraz (Rhône valley) lends a tight, fresh structure with aromatic and seasoned undertones. The Petit Verdot (Bordeaux) contributes a rich, berry character, and the Sangiovese, in a true Italian style, adds fruity flavors with flair in the palate. The result is a bold, charming, seductive and ultimately elegant wine.

VITIFICATION:

All 3 cultivars are Stellenbosch fruit. Planted in a North/South row direction, 3333 vines pe hectare and under irrigation. Irrigation is restricted in order to produce grapes with concentrated characteristics of this special variety. Sugar loading, berry aromatic sequence, PH and TA are used to determine phenolic ripeness and picking dates.

VINIFICATION:

The grapes were hand-picked into 18kg lug boxes and emptied into a harvest bin. 40% of the shiraz was kept as whole bunches whilst the rest, including the Sangiovese and Petit Verdot were destemmed and put into the crusher mash pump. All 3 cultivars were kept separate until blending before bottling. Cold soaking started, followed by spontaneous fermentation, after which it is inoculated with yeast to assure clean fermentation. 3 - 4 pump overs per day combined with punch downs and oxygen sparge occurred. After fermentation we add some structure to the wine with 2 weeks of extended maceration, followed with a gentle press to recover 650L per ton.

The wine underwent malolactic fermentation in a tank and then racked to barrels for aging. The wine was then aged for 15 months in 300l and 500l French oak barrels.

The Cabernet Sauvignon/ Merlot blend is made in a true Eikendal style, sophisticated and full-bodied. It is very expressive with ripe blackberry and blackcurrant characters dominating on the nose. The characteristic cassis and earthiness of Cabernet Sauvignon is clearly evident. Spicy and sweet French oak compliment and balance the fruit. Fleshy and concentrated fruit is supported by a backbone of fine-grained tannins.

The Stellenbosch vineyards are planted 170m above sea level and in "Koffieklip" ("Coffee Stone") soil with a clay layer 1m deep. Vineyards planted in an East-West row direction.

The Eikendal Rosé, with its charming light onion skin hue has delightful rose petal, fresh strawberries and raspberry flavors on the nose, that follows through to the palate. The wine has a full mouthfeel, with an understated acidity, and a long, pleasing finish.

The vineyards lie 155m above sea level. The terroir of all four cultivars consists of decomposed granite. There are four specific blocks used for this alluring Rosé, planted especially with rosé production in mind. With a maritime microclimate, the winters are wet and cold, and in summer the heat is tempered by a cool and fresh breeze from the Atlantic Ocean in False Bay.

VITIFICATION:

Only one block of 0,73ha of Grenache Noir and 0,73ha of Mourvèdre was planted in 2012. The 0,26ha of Cinsault was planted in 2016 on the Eikendal farm. The trellising for the Grenache and Cinsault is the vine by post system and the Mourvèdre is planted as bush vines without any trellising. Both these methods allow maximum sunlight and airflow through the vines to create a healthy vine and good light penetration from all sides.

VINIFICATION:

In the middle of February, the Grenache was picked first at 22,3°B and Mourvèdre at 21,8°B one day apart. The Cinsault and Merlot was harvested a day after at 21,6°B. Grapes were handpicked early in the morning to retain as much fresh flavors as possible. A portion of the grapes were destemmed, crushed and left in the press for an hour longer to extract a bit more color and complexity but the biggest portion underwent a delicate whole bunch press cycle to preserve the delicate flavors and structure of this rosé. Grenache Noir and Cinsault both had an orange color with pressing and the Mourvèdre had a light pink color. Each year the yield per block of the three varietals will differ and as a result the percentages on the label will also change correspondingly. After one night of settling the juice was carefully drawn from the primary lease. It was clarified right after fermentation and bottled very early to ensure vibrant flavors with a good acidity and mouthfeel.

The exuberant Eikendal Methode Cap Classique is made in very small quantities. On the nose it lures with citrus and lime notes, peaches & cream and a fresh minerality. The long, slow fermentation produces a very fine, pleasing mousse on the palate.

Chardonnay Clone 277 was specifically used for the MCC. The vineyards have been trellised in the VSP system. Plant spacing is 2.4 x 1m. Vines are under irrigation, using the Leaf Water Potential method to measure water stress in the grapes.

VITIFICATION:

Canopy was kept closed throughout the growing season to ensure minimal light intensity and as a result fresh acidity and remarkable concentrated flavors in the grapes. We picked the grapes early at approximately 19°B.

VINIFICATION:

The grapes were hand-picked in small crates and cooled down to 1°C before a gentle, whole bunch pressing with total focus on maintaining fruit purity and delicate aromatics. Only the finest heart of the press juice was used for this noble MCC. Settled for two nights.

Fermentation in stainless steel took place at approximately 12°C, relying solely on naturally present, wild yeasts. After fermentation the base wine was kept on the gross lees for six months. The wine was then bottled for secondary fermentation and aged two years on the lees in the bottle, before it was riddled, disgorged and finally bottled.

The Eikendal Chardonnay is an elegant style of Chardonnay. Notes of orange peel, and floral perfume comes through on the palate, with a fresh and tight mouthfeel. A mineral core with strong acidity drives this wine.

VITIFICATION:

These blocks are planted way up the Heldeberg Mountain and are on the highest point of Eikendal overlooking False Bay. It is a combination of bush vines, bush vine/post with no trellised vineyards used. Spur pruned. 2022 we had unusually high yields and harvested 1.5 kg/vine.

Plant density is between 5 000 to 7 500 vines/ha. Planted East/West. It is planted in decomposed granite with gravel and white clay +/- 60-80cm deep. Fully exposed to the South-easterly winds and receive cool air from False Bay. These vines undergo harsh treatment and left to their own devices, surviving day to day.

VINIFICATION:

Grapes were handpicked in 18kg lug boxes. This prevents it from crushing and lowers the risk of contamination. It also gives us a chance to sort the grapes at the cellar as well and have consistency from the vineyards to the cellar. It also prevents juice oxidizing because of grapes pressing against each other. We do 100% whole bunch pressing which is very delicate on the juice extraction with a juice recovery of around 620L per ton. Settled after 24 hour and racked to a combination of stainless-steel tank, cement-and plastic eggs where it underwent alcoholic fermentation. The NTU was monitored while racking in order to keep it at 200NTU for better mouth feel and adding volume to the end product. Before alcoholic fermentation finished 30% of the wine went into barrels for Malolactic fermentation to also give some creaminess to the wine.

The rest of the wine only went to barrel after fermentation. The wine went through baton age every 2 weeks for 3 months. This Chardonnay spent a total of 10 months in 500l French Oak barrels, 20% new oak, the rest second and third fill barrels.

The Eikendal Janina (unwooded Chardonnay) lures the senses with flavors of green apple, lemon and fresh pineapple. Nuances of honey and orange blossoms develop on the palate which is carried through mid-palate with a delightful, fresh and flinty finish.

VITIFICATION:

The North-facing vineyards are planted in decomposed granite and Tafelberg sandstone on the lower, western sloped of the Heldeberg, approximately 170m above sea level. With a maritime micro-climate, the winters are wet and cold, and in summer the heat is tempered by a cool breeze from the Atlantic Ocean. These are perfect conditions for premium Chardonnay. 3 different clones (Clones 277, 95 and 96) from 3 different blocks were used to produce this truly unique unwooded Chardonnay.

VINIFICATION:

The grapes were hand-picked into 18kg lug boxes, this prevents it from crushing and lowers the risk of contamination. The grapes were sorted first in the vineyards and again during off loading at the cellar and then went into the press as whole bunches to extract the juice gently (620L per ton). 24 hours settling of the juice and then racked straight into a combination of stainless-steel tanks, cement- and plastic eggs. After fermentation it was racked onto the fine lees until bottling.

The wine was baton aged every two weeks for 3 months.

The Eikendal Sauvignon Blanc has a beautiful light-yellow color and boasts a tropical palate. Hints of green apple and stone fruit on the nose which follows through to the palate. Crisp acidity with a full mouth-fee/ and a lengthy finish.

All of the grapes are meticulously sourced from a site-specific block in the Elgin Valley. Elgin offers a very cool climate at an altitude of 350m above sea level, which is optimal for premium Sauvignon Blanc production.

VITIFICATION:

We focus on two different clones of Sauvignon Blanc which offers a desired blend of fruit-driven flavors, combined with more earthy asparagus and fig flavors. Canopy manipulations range from extreme leaf removal to minimal intervention to produce these specific flavors. Vine spacing is 2.4m x 1.2m and grown without any irrigation.

VINIFICATION:

The grapes were hand-picked into 18kg lug boxes and emptied into fruit bins, which have some extra oxygen scavenging tannins at the bottom. In order to preserve the freshness of the grapes and juice on the journey from Elgin to our cellar we added Sulphur on to the full bins. At the cellar dry ice was added, and the grapes were destemmed, crushed and went into the skier. The juice underwent 4 hours of skin contact before it was racked and pressed to settle in the tank. Delicate juice extraction with a juice recovery of 670L per ton. Alcoholic fermentation took place in a combination of stainless-steel tanks, concrete eggs and plastic eggs, and was baton aged every 2 weeks for 2 months before bottling.

This perfume driven Chenin Blanc has intense tropical aromas extending from guava, pear, blackcurrant to citrussy notes ranging from grapefruit to lemon. The wine also has flintiness to it with nuances of jasmine. The palate is voluptuous with a smooth tropical finish.

The Chenin Blanc ripened later than usual which allowed for extended hang time in the vineyard, leading to higher concentration of flavors in the bunches. Made from block 7, which is split into two smaller blocks, where the row direction is perpendicular to one another. This allows for a complex flavor in the final product.

VITICULTURE:

The vines are planted in a vertical shoot positioning (VSP) trellis system. Leaves are removed during the ripening stages to prevent the fruit rotting. Sun kissed bunches add complexity to the wine.

Vines are planted on a combination of Malmesbury shale and deeper clay soils with good water holding capacity which ensures even growth during dry periods.

AGEING:

This wine was aged in 5% American oak and 95% French oak for 14 months. The wine was matured for an additional 3 months in bottle prior to releasing. This wine will develop further complexity with careful cellaring for 10 years.

TASTING NOTES:

Concentrated dark fruit aromas of blackcurrant and blue berries which follow through to the palate. Pinecone and black pepper scents are in harmony with fruit, creating a full-bodied complex wine. Predominantly, aged in French oak barrels with low toasting levels to emphasize fruit and volume in the final wine. The use of 15% American oak boosts roundness and brings forth a dark broody character in final wine. 20% New oak was used in final blend.

TASTING NOTES:

Vibrant red-purple hue in the glass with aromas of nutmeg, star anise cinnamon and subtle smoky undertones. On the palate a burst of mulberry and Maraschino cherry which interlaces beautifully with the sweet spice. Subtle smokiness and balanced acidity to a lingering finish.
