The juice settles in stainless steel tanks for 48 hours at 8 °C. The clear juice is then racked from the thick the lees and inoculated with yeast. Fermentation, which takes place at 12 °C, takes 12 days to complete. The wine spent 16 months on the lees during after second fermentation before it was disgorged.

VINIFICATION AND CELLAR NOTES:

All grapes are handpicked during the early morning hours and then cooled overnight in a temperature -controlled room at 5 °C. No enzymes are used during the settling process. The juice is racked from the thick lees to 2000L cement tanks. The wine ferment naturally and can take up to three months to complete. The wine spends a total of 7 months in cement tanks before it is blended and bottled.

VINIFICATION AND CELLAR NOTES:

All the different components are handpicked in the early morning hours and then cooled overnight in a temperature - controlled room at 5°C. • EMILY HOBHOUSE: Although British born, Emily Hobhouse has become an honorary South African through her selfless and courageous actions, which exposed the inhumanity of concentration camps during the Anglo-Boer War (1899-1902). We dedicate this wine to her memory and brave women fighting for what is right, all over the world.

The macro climate is maritime, with cold wet winters and sunny warm summers.
  • VITICULTURE: Biodynamic (organic) practices are followed and therefore no herbicides or chemical sprays were used in the production of these grapes. A minimum interference approach is taken in the vineyards to get a true reflection of the unique terroir. Vines are pruned and suckered to get an evenly spaced shoot position which results in maximum flow of cool air through the bunches.
  • VINIFICATION: Predominantly unwooded Chardonnay, blended with a small amount of lightly wooded Pinot Noir from the Elgin. Both varieties were whole bunched pressed and allowed native yeast fermentation. Pinot Noir is transferred to aged wooden barrels, while the Chardonnay stayed in tanks in order to mature on the lees before being blended.

TASTING NOTES:

  • AROMA PROFILE: To craft a “noble late” wine is a labor of love, but often the results can be the most amazing taste sensation. Edelgoud is our attempt at this elusive elixir and only two barrels were produced from Sauvignon Blanc grapes. This wine with its unique golden color entices the palate with seductive flavors of apricot and nectarine, passion fruit, honeycomb, marmalade, apple and dried peach. With its clean, crisp and refreshing finish, this wine will pair well with crème bruleé and a variety of cheeses.
  • TERROIR: Rooted in deep fine granite Tukulu soils on the slopes of the Helderberg Mountain, these vineyards enjoy the refreshingly cool breezes from the Atlantic Ocean during the hot summer months, resulting in even ripening of the berries.
  • VITICULTURE: With favorable conditions for Botrytis rot the grapes were left on the vines until Middle of March. Bunches were carefully selected for clean Botrytis rot and then handpicked at 43 Balling. The yield was low at approximately 1 ton/ha.
  • VINIFICATION: As the grapes entered the cellar, skin contact was applied for 12 hours, there after it was whole bunch pressed into a stainless-steel fermentation tank. The juice was fermented slowly at 14-16 ºC for 12 days. The wine was matured in 2nd fill French oak barrels for 5 months after which it was lightly fined and bottled.

The Eikendal Classique is subtly rich and powerful with delicate flavors of blue and black berries, earthiness and a classical freshness. It is perfectly balanced with red- and black fruit, seductive oak spice, fresh acidity and fine tannins.

VITIFICATION:

100% Stellenbosch fruit. The vineyards are trellised in the Vertical Shoot Position trellising system on decomposed "koffieklip" ("coffee stone") soils. Only selected grapes are used from site specific blocks on the Eikendal farm. Specific leaf removal is applied to reduce green flavors and enhance fruit, color and structure.

VINIFICATION:

We pick all of our grapes by hand and into 18kg lug boxes to prevent the grapes from crushing and to lower the contamination risk. We also use this approach to ensure consistency in the cellar by sorting the grapes. The grapes were destemmed and hand sorted before being conveyed into a tank where it underwent pump overs 3 to 4 times per day in conjunction with pushdowns and oxygen sparge. After fermentation we did extended maceration to add structure to the wine. The grapes were gently pressed and underwent malolactic fermentation before it was racked to barrel for 18 months (20% new oak barrels used) Each varietal was fermented and matured separately and only blended before bottling.
