  • WINEMAKERS COMMENTS: All components were picked separately at optimum ripeness, after which the grapes were destemmed, but not crushed, leaving the berries whole for a softer extraction. Fermented separately in open-top fermenters, a combination of punch-downs and pump-overs were used, with most of the extraction focused on the first half of the fermentation. After the fermentation was completed, the grapes were gently pressed and underwent natural MLF in the tank before being transferred to barrels for 12 months.
