Production Process

The grapes for this Merlot are handpicked during the early morning hours to ensure optimal freshness. After harvesting, the grapes are crushed and destemmed before being transferred to stainless-steel fermenters. This process minimizes the introduction of green flavors by carefully removing all green stems. Fermentation occurs in closed-top stainless-steel tanks, with regular pump-overs to enhance extraction. Following fermentation, the wine is left on the skins for an additional seven days before being pressed into neutral French oak barrels for malolactic fermentation, which adds complexity and smoothness to the final product. The wine matures in barrels for a total of 10 months before blending and bottling13.
